La Petite Maison's Bikini – How to Make It

We present a home-style version of a cocktail found on a new cocktail list. It's a large-volume prepared mix that's packed full of flavours of the holiday season, rendering it ideal for a holiday party. Save the extra syrup to use in morning drinks, sweets, or to mix additional servings of the drink.

The Bikini Cocktail

Yields 10 people

Ingredients for the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

Ingredients for the Premix (yields 850ml, to serve 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

To prepare the Cordial: Put the listed ingredients inside a pot, heat until it reaches a light boil, stirring until the sugar dissolves. Next, turn off the stove and leave to cool fully. Pour into a sterilised bottle, cap it and refrigerate it in the fridge, where it will keep for around a month.

To make Cocktail Base: Mix all the spirits and syrup into a big jug, leave to sit for 60 minutes, then strain preferably using cheesecloth, so it's fully clarified.

When ready to serve: Add 85ml from the premix into your cocktail shaker filled with ice, gently stirring gently for a minute to chill. Filter into an chilled martini glass or equivalent, top with a few cranberries adding the final touch with a brief mist of mandarin oil above the glass.
